The Easiest Shakshuka

Other than it being one of the most fun words to say, it’s also a delicious North African / Middle Eastern dish comprised of saucy tomatoes and eggs cracked right on top.

Healthy, cheap, delicious, & easy to whip up, Shakshuka may be the perfect dish.
While I’ve often seen it served at breakfast or brunch (hence, the eggs), Matthew and I decided to try a fun spin on it for dinner – sans the eggs.

And we only used 5 ingredients.

Okay, yes, we cheated.
We actually used a pre-made Shakshuka sauce we found at the grocery store.
Which made it an even easier, faster, cheaper meal!

Here’s what we used:

  • A jar of Heirloom Shakushuka (Private Selection, wassup Kroger)
  • A can of Garbanzo Beans (aka chickpeas)
  • A handful of Grilled Onions (not pictured below)
  • A handful of Spinach
  • Tortilla (+ cheese) or chips (both optional, but highly recommended)

& here’s how we made it:

  1. Place the onions and garbanzo beans in a pan over medium heat
  2. After ~5 minutes grilling the onions and garbanzo beans, add the Shakshuka sauce
  3. Let simmer for ~3 minutes before stirring in the spinach
  4. Remove from heat and dish into bowls
  5. Enjoy with chips or a grilled cheese tortilla (tip: on a non-stick pan, cook the tortilla w/ the cheese on top until melted slightly. Then flip over to burn the cheese on the other side – delish!)

Shakshuka may be my new favorite dish (mainly b/c it’s saucy, spicy, and can be enjoyed with chips) + its making this April snowstorm kinda worth it (yay for comfort foods).

Next time, I need to stray away from this knock-off version and cook it from scratch with the eggs and all! Stay tuned for that…

Have you made Shakshuka? What do you think?
