It has been chilly in Denver lately, so we have been breaking out the Crockpot pretty often these days.
One cold day this past week, Matthew was craving some French onion soup, so we decided to give it a try – while changing up the standard recipe to make it our own. Like all Crockpot meals, it was SO easy and gave us some good smells all day long.
Here’s what we used for ~4 servings of our French Onion+ Soup:
- 3 onions, chopped
- 1 tbsp butter
- 2 tbsp chicken bouillon glaze
- 1 can of chickpeas
- 2 handfuls of spinach
- 1 cup water
- Garlic powder
- A handful of cheese (your choice)
- Bread (optional)

& here’s how we made it:
- Begin by placing the chopped onions and butter on a stove pan on medium heat. Simmer onions until caramelized
- Toss caramelized onions, chicken bouillon, garlic powder, and water into Crockpot on high heat. Cook for about 2 hours while stirring occasionally
- Place can of chickpeas and spinach into Crockpot. Cook for about 1 – 2 more hours while stirring occasionally
- Right before you’re ready to eat, add cheese to the top of soup and wait for it to melt (about 5-10 minutes)
- Prep your bread (we toasted ours), scoop some of the soup into a bowl and enjoy with bread and a spoon!

I’ve never been the biggest French onion soup fan, but this turned out super warming and tasty – especially with the addition of chickpeas and spinach. French onion soup does tend to be too salty for my taste, so if you’re like me and need a bit less salt, add more water and less bouillon.
